Red Noodle Yard Long Bean (Vigna unguiculata)
Purple blossoms and stringless, scarlet pods flourish on sturdy vines that stretch to 8’ tall. This Chinese heirloom yields 18-22” beans that are best harvested when young and tender. Beans change from red to green once cooked and are most delicious sautéed and in stir-fries.
