Parsnips are an underappreciated vegetable in the garden.  These long, white roots are a wonderful addition to a roasted root medley, baked into parsnip fries, or mashed into a delicious parsnip puree to accompany a robust flavored meat like beef or venison.  Parsley roots and Salsify are very similar, smaller and with their own unique flavor, and can be used in a similar way.  I love them all roasted!
