Organic Jacob’s Cattle Bean (Phaseolus vulgaris)
Named for the spotted cows in the biblical story, this beautiful merlot-mottled bean was originally developed by the Passamaquoddy, an indiginous tribe in Maine. It’s now a go-to for northeastern baked beans as it grows well in cool summer climates.
