Crisp and juicy, cucumbers thrive in the warmth of summer. Delightful in a salad or saved for winter as pickles, cucumbers are a very popular vegetable. Most are green, but my favorites are the white ones, a little milder and sweeter than the traditional green cucumbers. With some varieties developed for slicing and others for pickling, some are ‘burpless’ which actually means they don’t have spines, and there is even a variety for growing in greenhouses that doesn’t need insect pollinators. I love cucumbers lightly pickled in cider vinegar, salt and honey with some mustard seeds. A crisp, refreshing, light snack or part of a light summer dinner.
