The Delicata squash is my favorite winter squash. I don't generally cook squash separately, I add it to my stews when I make them. The delicata squash is really nice for that because even after it's been stored in the basement for half the winter, you can still peel it with a potato peeler instead of having to cut the rind away like most winter squashes. I also really enjoy the flavor of this squash, and it adds a lot to the stew.
