55-70 day. A Danish heirloom beet, cylindra or formanova is a long cylindrical deep red beet. This makes it great for slicing, producing more uniform slices than a traditional beet. It also has a wonderful, fined grained texture and a great sweet flavor when roasted. It is an excellent choice for canning, pickling, or roasting. My favorite way to serve beets is to make grilled beet chips. I slice them, toss with olive oil, balsamic vinegar, and sea salt and grill them until they are crisp and browned.

These beets were perfect for my small raised bed garden. This was my first try at beets and I'll never forget them again. Great flavor, germinated well and have superb greens. The only drawback I had was the variance in sizes. They're not big beets but some were really small. That could have been something I did so I won't blame the beets. I will still grow these again, regardless of the size.
