Summer squash is a taste of summer. Zucchini, crookneck, and scallop, these immature squash fruits are one of the prizes of the summer garden. When grown in rich soil, they are extremely prolific, even to the point of having way too many squash around. But make sure to harvest them young so that they are free of lots of seeds and are tender and delicious. If a few get away from you, there's always zucchini bread to enjoy!
