The famous 'Hunchback' strain of cardoon with thick, almost spineless stems. Blanching the stems for two weeks prior to harvest ensures tender and deliciouis stalks. Just wrap in newspaper or a floating row cover. Enjoy the flavorful stalks battered and fried or baked with paramesan.

I planted some Cardoon a few years back. It's taken me this long to eradicate it from my garden. It was a tasty veggie, but be careful where you let it grow!
