120-150 days. These white roots, similar in size to a carrot, with creamy white flesh are a staple in Europe. They are said to have a flavor similar to oysters. You roots can be eaten raw, mature roots are best cooked. I like oven roasting them, delicious! I always had difficulty growing salsify, but Fiore Blue was easy. Just plant, water, and watch them grow.
