Preserving Food Without Freezing or Canning is a translation of a French book of traditional preservation methods.  If you want to preserve the fruits of your garden and would like to do so without needing freezers or canning, then this is a great place to start.  The main preservation methods presented are drying and lactofermenting.  The benefits of these methods is that they preserve more of the nutrients as well as providing a better texture than modern preservation methods.  Lactofermenting actually increases the available nutrients, making them more nutritious than fresh.
