120 day. A long season root that can be overwintered, salsify is easy to grow. It produces creamy white roots, 8 to 9 inches long and 1 to 1 ½ inches across at the shoulder. Peeled and sliced then boiled or fried, or in sauces or soups, it is a very versatile vegetable. It is slow to germinate, up to 21 days.


Minimum of 200 seeds per packet.
